Sheera

Sheera is cream of wheat/semolina cooked in milk and flavored with cardamom, nuts
and raisins.

Ingredients

  • 1 cup cream of wheat/semolina
  • ¼ cup sugar
  • 2 cups milk
  • ¼ cup ghee
  • ¼ cup almonds, chopped finely
  • 10 raisins or more
  • 1 ½ teaspoons cardamom powder
  • saffron, a pinch (optional)
Methods
  1. Heat a deep thick-bottomed pan. Add ghee, cardamom powder and semolina.
  2. On a low heat roast till semolina starts giving a nice aroma.
  3. It will take about 7-8 minutes. Do not let the semolina become brown.
  4. Add 2 cups of milk. Stir well and cook covered on low heat for a few minutes.
  5. Remove the lid.  Add sugar and saffron. Mix well and let it cook for a few minutes. Add
    almonds. Cover and cook for a few minutes.
  6. The sheera is ready once it moves as one mass and is soft when tasted.
  7. The sheera may be served hot or cold.
