Carrot Halwa

Halwa (or halva) refers to many types of dense, sweet confections, served across India. This
dish does take time to prepare, if you wish to serve it for a dinner it can be prepared earlier
and heated when serving.

Ingredients

  • 500g carrots
  • 2 cups full cream milk
  • 100g condensed milk or cream
  • ¼ cup ghee
  • 4-5 cashew nut, almonds, pista, chopped fine
  • 10-15 raisins
  • 1 teaspoon cardamom powder
Methods
  • Grate carrots using a fine grater. Use a food processor if you have one.
  • Heat a deep thick-bottom pan. Add ghee and carrots. Fry grated carrots for about 5 minutes.
  • Add milk. Stir and cook on low heat till the mixture thickens. It may take about 20 minutes or
    more.
  • Add sugar. Mix well and cook some more till sugar dissolves and the mixture thickens again.
  • Add condensed milk/cream. Mix well. Cook for 10 minutes stirring occasionally
  • Add chopped nuts, raisins, cardamom powder. Mix well and take off the heat.
  • Carrot halva is ready to serve. Serve it hot or cold according to your preference.
  • It can also be served with ice cream or yoghurt.
