Beans Poriyal

(French beans with Fresh Coconut)

Ingredients

  • 1 ½ cups french beans, chopped
  • 2-3 tablespoons moong dhal
  • 1 green chilli
  • ¼ teaspoon turmeric powder
  • ¼ cup coconut, grated
  • 1 onion, chopped
  • 1 teaspoon urad dhal
  • a stem of curry leaves
  • 1 teaspoon oil
  • 1 teaspoon mustard seeds
  • salt to taste
Methods
  1. First, remove the head and tail end of the beans and chop them to make fine pieces.
  2. Boil the beans, moong dhal, turmeric, salt and red chili powder in water. Cook them until the
    moong dhal and beans turn tender. Thereafter, drain the water and keep the mixture aside.
  3. Heat the oil in a pan. Then add the mustard, urad dhal, curry leaves and onions. Sauté the
    mixture until the onions turn golden brown.
  4. Add the beans and moong dhal mixture and fry for about 2 minutes, until the moisture is
    absorbed.
  5. Add grated coconut and stir well for a minute.
    Serve hot.
