Carrot- Penut Salad

Ingredients

  • ¾ cup roasted peanuts
  • 5 carrots, shredded
  • 1 teaspoon salt
  • 1 tablespoon oil
  • pinch of asafetida
  • 1 teaspoon cumin/mustard/sesame seeds mixture
  • ¼ teaspoon cumin powder
  • ¼ teaspoon coriander powder
  • ½ teaspoon chilli powder
  • 2 tablespoons fresh coriander, chopped
  • 1 teaspoon lemon juice
Methods
  1. Coarsely crush the roasted peanuts in a blender.
  2. Mix the crushed peanuts in a bowl with carrots and salt.
  3. Heat a small pot; add oil, asafetida and cumin/mustard/sesame seeds mixture. Wait for the
    seeds to pop then remove from the heat.
  4. To this mixture add cumin, coriander powder, chilli powder and lemon juice.
  5. Combine the carrots and the tempering. Mix well and chill.
