Coriander-Mint Chutney

Ingredients

  • 3 cups fresh coriander, chopped
  • ½ cup mint leaves
  • 1 green chilli
  • 4 garlic cloves
  • 2cm piece of ginger
  • 2 tablespoons roasted gram (chana) dhal
  • ½ teaspoon turmeric powder
  • 2 tablespoons lemon juice
  • salt to taste
Methods
  1. Put all the ingredients in a blender and grind to a very fine paste with a little water.
  2. Store in a clean airtight jar in the fridge.
  3. The turmeric and lemon help in retaining the green colour, as this chutney has the tendency
    to turn black with oxidation.
  4. Variation- Add 160g of roasted peanuts (without skin) when blending.
