Poha

Poha is a simple breakfast made from beaten rice complemented with a blend of peanut,
coconut and fresh coriander

Ingredients

  • 2 cups thick poha (beaten rice)
  • 1 onion, chopped
  • 1-2 green chilli, chopped
  • 1 teaspoon Kripa Desi Ghee/oil
  • pinch of asafetida
  • ½ teaspoon Kripa Turmeric 
  • ½ teaspoon mustard seeds
  • ¼ cup roasted peanuts
  • ¼ cup fresh coriander, chopped
  • 1 teaspoon lemon juice
  • ¼ cup grated coconut
  • pinch of sugar
  • salt to taste
  • lemon wedges
Methods
  1. Lightly rinse the poha in a colander and drain water completely.
  2. To the poha add the sugar and salt to taste.
  3. Heat oil in a pan. Add mustard seeds, asafetida, green chilli, turmeric, onion. Cook for 5 minutes or until onions are golden brown.
  4. Add peanuts and stir. Add poha, mix well and cover with a lid.
  5. Simmer for 2 minutes.
  6. Take off lid and mix well until poha is fluffy and water evaporates. If the poha becomes lumpy you have used too much water to rinse or the water did not completely drain. If this occurs,
    add a little oil and allow the poha to fry until brown and dry.
  7. Before serving sprinkle lemon juice and garnish with coriander, lemon wedge and coconut.
