Tomato Chutney

Ingredients

  • 4 tomatoes, roughly chopped
  • 1 red onions, roughly chopped
  • 2 dry red chillies
  • 2 garlic cloves
  • 1 teaspoon urad dhal
  • 1 tablespoon oil
  • salt to taste
  • coriander to garnish

For the tempering

  • 1 teaspoon oil
  • ½ teaspoon mustard seeds
  • 5 curry leaves
Methods
  1. Place a saucepan on medium heat. Add the oil. When hot, sauté the urad dhal and the red
    chillies for a couple of minutes.
  2. Add onion and sauté for a few minutes.
  3. Add the tomato and cook until soft.
  4. Remove from heat, grind well and keep aside.
  5. Prepare the tempering. Heat the oil in a saucepan, add mustard seeds and curry leaves.
  6. When the mustard seeds crackle add the tomato and onion into the tempering. Simmer for
    five minutes.
  7. Garnish with coriander leaves.
    Note: To the tomato chutney add half a cup of roasted almonds before grinding.
    This chutney can be poured over grilled vegetables or used as a pasta sauce.
